Materials:
• camera
• celery (3 stalks, 5-10 cm in length, they must all be the same size)
• metric ruler
• 3 containers (clear glasses, all the same size, must hold at least 1 cup water)
• glass bowl
• water (distilled is best, but tap water will do)
• razor blade or sharp knife
• something to stir with (knife, fork, spoon)
Procedure:
1. Label the three containers:“water”“saline”“salt water”
2. Fill each of the three containers with 1 cup of water.
3. Add ½ teaspoon of salt to the container labeled “saline.”
Mix the solution until you no longer see the salt granules.
4. Add 5 teaspoons of salt to the container labeled “salt water.”

5. Put some water in the glass bowl. While holding the bottom end of the celery stalks under the water in the bowl, cut off the bottom two centimeters of the stalk.
6. Quickly place one freshly cut celery stalk intoeach container (cut end down).

8. Allow the celery to remain in room temperature water for up to 24 hours.
9. Record the condition of the celery (firm, soft) every 2 hoursfor 10 hours. Also record the condition of the celery at 24 hours.
